Matar Paneer Recipe (Mutter Paneer)

Ingredients
- 1 tbsp sunflower oil
- 225g paneer, cut into 3cm cubes
- 2.5cm piece ginger, grated
- 1 tsp ground cumin
- 1 tsp turmeric
- 1 tsp ground coriander
- 1 green chili, finely sliced
- 4 large ripe tomatoes, peeled and chopped (or ½ 400g can chopped tomatoes)
- 150g frozen peas
- 1 tsp garam masala
- small pack coriander, roughly chopped
- naan bread, roti or rice, to serve
Method
STEP 1
In a frying pan, heat the oil over high heat until it is shimmeringly hot. Reduce the heat after adding the paneer. The paneer will brown faster than you think, so don't walk away. Fry until the edges begin to brown, then turn it over and brown on the other side. Paneer should be taken out of the pan and dried on paper towels.
STEP 2
Fry the ginger, cumin, turmeric, coriander powder, and chili for one minute in the pan. After adding the tomatoes and mashing them with the back of a spoon, boil the mixture for 5 minutes, or until the sauce begins to smell good. If it's too thick, a splash of water should help. proper season. Stir in the paneer and top with the garam masala after adding the peas and simmering for an additional two minutes. Serve over naan, flatbread, or rice and divide between two bowls. Garnish with coriander leaves.
