Ingredients:
- 2 cups corn kernels (you can use fresh, canned, or frozen corn)
- 1 small red onion, finely diced
- 1-2 chipotle peppers in adobo sauce (adjust to your spice preference)
- 1-2 tablespoons adobo sauce (from the chipotle pepper can)
- 1 large tomato, diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice (about 1 lime)
- Salt and pepper to taste
Method:
1. Cut the kernels from the cob of fresh corn after it has cooled and been cooked till soft. Thaw frozen corn before using it, and drain and rinse canned corn well.
2. Combine the diced tomato, red onion and corn in a mixing bowl.
3. Remove the seeds from the chipotle peppers for a milder flavour and finely chop them before adding them to the bowl. Depending on how hot you like your salsa, change the quantity.
4. Stir in 1 to 2 teaspoons of the adobo sauce from the chipotle pepper can. This will give the salsa smokey and hot flavours. Depending on how hot you like it, change the quantity.

8. Gently incorporate all the ingredients by tossing them together.
