Fresh Tomato Basil Salsaπππ¨π³π½
A colourful and spicy condiment that is brimming with the flavours of ripe tomatoes and fragrant basil is fresh tomato basil salsa. It's a delicious combination of diced tomatoes, chopped basil, garlic, lime juice, and a tiny bit of olive oil, ideal for giving your dishes a light twist.
Ingredients:
- 10 Roma tomatoes (Regular Romas in the grocery are about 3.5 ounces each). Once seeded and chopped, you will have about 4 cups.
- 12 cups fresh basil leaves, removed from the stems, washed, and dried
- 3 cloves of garlic, peeled
- 2 tablespoons extra virgin olive oil
- 1 teaspoon of salt
- 1/4 teaspoon black pepper
Directions:
The tomatoes should be cut in half lengthwise. Remove and throw away the pulp and seeds. The tomatoes should be finely chopped and put in a big bowl.
3–4 basil leaves stacked on top of one another. On one of the long sides, wrap them up, and then cut through the roll with a knife. These basil ribbons should be cut with a knife a couple of times before being added to the bowl. Continue by using the remaining basil leaves.
The garlic cloves should be finely minced by hand or in a food processor before being added to the bowl. Salt, pepper, and oil should be added. Mix the ingredients together gently.
The salsa can be served right away or left to combine the flavours for about an hour at room temperature.
With tortilla or pita chips, serve the salsa. You may also serve it on small slices of artisan sourdough or white bread. If you like, cover the toast with some mozzarella or grated Parmesan cheese and broil it for approximately a minute before serving.
