Ingredients:


2 1/2 cups all-purpose flour
2 tablespoons all-purpose flour
1 cup of high-quality cocoa
2 tablespoons of premium cocoa
1 tablespoon baking powder
1 1/2 teaspoons baking soda
2 1/4 teaspoons ground cinnamon
3/4 teaspoon freshly grated nutmeg
3/4 cup buttermilk
1 1/2 cups pumpkin purée
1 1/2 teaspoons of pure vanilla extract
1 stick of unsalted butter
1 1/2 cups dark brown sugar
1 1/2 cups granulated sugar
5 large eggs
Orange Cream-Cheese Frosting


Directions:


Step 1: Prepare the Cake Pans:
Begin by preheating your oven to a toasty 350 degrees F. Lightly butter three 8-inch cake pans, then line the bottoms with 8-inch parchment paper circles. Give the parchment paper a light buttering as well, and set your pans aside.


Step 2: Craft the Batter
In a large bowl, sift together the flour, cocoa, baking powder, baking soda, cinnamon, and nutmeg. In a separate medium bowl, blend the buttermilk, pumpkin, and vanilla. In another large bowl, use an electric mixer set to medium speed to beat together the butter and sugars until the mixture is fluffy. Now, add your eggs one at a time, ensuring a smooth, light blend. Alternately add your flour mixture and buttermilk mixture, making sure to mix well after each addition.


Step 3: Bake to Perfection:
Divide your delectable batter evenly among the pans and slide them into the oven. Bake until a wooden skewer inserted into the centres emerges clean, which should take around 35 minutes. Allow your cakes to cool in the pans for 20 minutes before removing them and cooling further. Repeat this layering with the second and third layers. For stability, insert three skewers, each cut to be 1/4 inch shorter than your cake's height, before applying the top layer.
